Tinotuan, Sambal Roa & Fried Ikan Asin

Tinotuan, juga dikenal sebagai Bubur Manado. Tapi masakan Manado yang kubuat sudah disesuaikan dengan lidah Jawa.

Tinotuan also known as Manadonese Porridge. A sort of white rice porridge containing some types of vegetable. Usually served with fried salted fish and Sambal Roa, chili sauce with smoked garfish. Manado is located about 1,300 kilometers from Tangerang, the city where I currently live. So, the Manadonese dishes I cook are adjusted to local taste.

Bahan-bahan Tinotuan:
400 gram beras putih
800 mililiter kaldu ayam
2 batang serai, geprek
2 sendok teh garam
2 sendok teh lada putih bubuk
2 sendok teh gula pasir
2 buah jagung, pipil
2 ikat kangkung, ambil daunnya
3 buah ubi jalar, kupas, potong dadu ukuran 2 sentimeter
1 buah singkong, kupas, potong dadu ukuran 2 sentimeter
segenggam kemangi

Cara membuatnya:
1. Rebus beras dalam kaldu ayam hingga hampir matang.
2. Tambahkan ubi jalar dan singkong. Rebus hingga beras menjadi bubur dan ubi jalar serta singkong lunak.
3. Tambahkan kangkung dan jagung, serta serai, garam, lada putih bubuk dan gula pasir. Aduk rata. Tunggu 3 menit. Angkat. Sajikan bersama ikan asin goreng dan sambal roa.

The ingredients of Tinotuan:
400 grams white rice
800 milliliters chicken stock
2 stalks lemon grass, crushed
2 tea spoons salt
2 tea spoons white pepper powder
2 tea spoons sugar
2 pieces corn, kerneled
2 packs kangkung, pick the leaves
3 pieces sweet potato, peeled, diced
a piece of cassava, peeled, diced
a handful lemon basil

The directions:
1. Stew white rice until half cooked.
2. Add sweet potato and cassava. Stew until white rice turns into porridge, and sweet potato also cassava are tender.
3. Add kangkung and corn, also lemongrass, salt, white pepper powder and sugar. Stir well. Wait for about 3 minutes. Remove. Serve.

Bahan-bahan Sambal Roa:
3 buah ikan roa, ambil dagingnya, panggang hingga garing
1 buah tomat
6 butir bawang merah
12 buah cabe merah
1 sendok makan minyak goreng
setengah sendok teh garam
1 sendok teh lada putih bubuk
setengah sendok teh gula pasir
setengah jeruk nipis, ambil airnya

Cara membuatnya:
1. Haluskan ikan roa, tomat, bawang merah, dan cabe merah menggunakan blender.
2. Panaskan minyak goreng dengan api sedang.
3. Tumis sambal bersama garam, lada putih bubuk dan gula pasir hingga harum.
4. Tambahkan air jeruk nipis. Aduk rata. Angkat. Sajikan bersama tinotuan dan ikan asin goreng.

The ingredients of Sambal Roa:
3 pieces smoked garfish, pick the flesh, roasted until crispy
a piece of tomato
6 pieces shallot
12 pieces red chili pepper
a table spoon oil
a half tea spoon salt
a tea spoon white pepper powder
a half tea spoon sugar
a half lime, squeezed

The directions:
1. Crush smoked garfish, tomato, shallot and red chili pepper using blender or food processor.
2. Medium-high heat oil.
3. Sauté sambal with salt, white pepper powder and sugar.
4. Add lime juice. Stir well. Remove. Serve.
