Teri Kecap Pedas

Ingat sambal goreng kering teri? Ini versi mudahnya. Bikin agak banyak, lalu simpan di toples. Praktis jika mendadak lapar di tengah malam.

Goreng segenggam ikan teri hingga garing. Tiriskan.

Goreng segenggam kacang tanah hingga kecoklatan. Tiriskan.

Goreng segenggam tempe yang diiris bentuk korek api hingga agak garing. Tiriskan.

Panaskan 1 sendok makan minyak goreng dengan api sedang. Tumis 1 siung bawang putih iris tipis, 1 buah bawang merah iris tipis, 2 buah cabe merah iris serong dan 1 lembar daun jeruk purut iris tipis hingga harum.

Tambahkan teri goreng, kacang goreng dan tempe goreng, serta sedikit lada putih bubuk dan gula pasir. Tak perlu garam, karena teri sudah cukup asin. Aduk rata.

Tambahkan 2 sendok makan kecap manis. Aduk rata hingga agak kering. Angkat. Sajikan atau hilangkan uap panasnya, lalu simpan di toples di tempat kering dan sejuk.

There’s a famous Indonesian food named sambal goreng kering teri. Usually consists of fried teri fish, fried tempeh, and fried peanut cooked in sambal with palm sugar. Today, I made the super easy version of it. You can make it in a bit large amount, store it in canister, and ready to be enjoyed whenever you want it.

Deep fry a handful teri fish until crispy. Strain.

Deep fry a handful peanut until golden brown. Strain.

Deep fry a handful tempeh, cut into small julliene shape, until a bit crispy. Strain.

Medium low heat 1 table spoon oil. Sauté 1 piece garlic chopped, 1 piece shallot chopped, 2 pieces red chili pepper chopped and a piece of kaffir lime leaf chopped until the aroma comes out.

Add teri fish,peanut and tempeh, also a pinch of white pepper powder and sugar. Salt is not necessary, since teri fish is salty enough. Stir well.

Add 2 table spoon sweet soy sauce. Stir well until it starts to caramelize. Remove from the heat. Serve or wait for the hot vapor to disappear then store in a canister.
