Kentang Telur Sambal

Hari ini nampaknya suamiku kangen sama masakan Mamanya. Salah satu masakan yang cukup sering dibuat Ibu Mertuaku tersebut adalah sambal goreng kentang dan telur. Beliau biasanya memakai telur ayam rebus, yang sebenarnya kurang diminati anaknya tersayang. Aku sendiri kurang suka telur rebus. Karena itu, aku pakai telur puyuh ceplok.

Kupas dan potong dadu 2 buah kentang. Goreng hingga cokelat keemasan. Tiriskan.

Buat telur-telur mata sapi dari 15 buah telur puyuh. Tiriskan.

Haluskan 2 siung bawang putih, 2 buah
bawang merah dan 6 buah cabe merah. Panaskan 1 sendok makan minyak, tumis bumbu halus hingga harum. Masukkan kentang goreng dan telur puyuh ceplok. Tambahkan sedikit garam dan lada hitam. Aduk-aduk hingga bumbu tercampur rata. Angkat. Sajikan.

It seems that my beloved hubby missed his mother’s cook. One of her dishes is potato and egg with sambal. She always uses boiled eggs, that actually nobody likes it. Neither do I. So I use fried quail eggs.

Peel and cut into cubes 2 potatoes. Fry them until golden brown. Strain.

Make sunny eggs from 15 quail eggs. Strain.

Crush 2 pieces garlic, 2 pieces shallot and 6 pieces red chili pepper. Heat 1 table spoon oil, sauté the crushed spices until the aroma comes out. Add the fried potato and quail eggs. Add a pinch of salt and pepper. Mix well, then take out from the heat and serve.
