Failed: Empal

Sebenarnya, aku ingin masak empal gepuk. Ternyata, waktu merebus dagingnya terlalu lama. Jadi dagingnya hancur seperti suwiran. Tapi ternyata rasanya nggak buruk juga kok.

Rebus 250 gr daging sapi tanpa lemak dengan 3 gelas air hingga air tersisa sekitar setengah gelas.

Ambil daging dari air rebusan, lalu potong-potong setebal 1,5 cm. Masukkan lagi ke dalam air rebusan.

Haluskan 3 siung bawang putih, 3 buah bawang merah, 1 sendok makan ketumbar. Masukkan bumbu halus tersebut ke dalam rebusan daging bersama 3 lembar daun salam, 1 sendok makan gula jawa, 1 sendok makan asam jawa, 2 cm lengkuas geprek, 1 sendok teh garam dan 1 sendok teh lada hitam. Diamkan hingga mendidih selama 2 menit.

Ambil daging dari air rebusan, tumis dengan 2 sendok makan minyak hingga kecoklatan. Sajikan dengan taburan bawang goreng.

Actually, I was intending to cook empal gepuk, a typical Indonesian fried beef slices. But since I over-boiled the beef that it became fragile, so I made it into sautéed beef scratch. Not very bad though.

Boil 250 grams beef without fat with 3 cups water until the water remains about a half cups.

Take the beef out of the pan, slice into pieces of 1.5 centimeters each. Put them back to the pan.

Crush 3 pieces garlic, 3 pieces shallot, 1 table spoon coriander. Add the crushed spices into the beef pan with 3 pieces bay leaf, 1 table spoon palm sugar, 1 table spoon tamarind, 2 centimeters galangal crushed, 1 tea spoon salt and 1 tea spoon black pepper. Let it boils again and wait for 2 minutes.

Take out the beef from the pan. Medium heat 2 table spoons oil, then sauté the beef until it turns brownish. Serve with sprinkles of fried shallot.
