Soto Ayam Goreng

Sebenarnya aku bukan penggemar soto, tapi karena ide itu melintas di otakku, jadilah hari ini aku bikin soto ayam goreng.

Tumbuk 4 siung bawang putih, 4 siung bawang merah, 1 cm jahe kupas, 2 cm kunyit kupas, 1 sendok teh ketumbar, 2 buah kemiri. Tumis bumbu halus tersebut hingga wangi.

Setengah ekor ayam yang sudah dibersihkan dan dipotong-potong direbus dalam 2 gelas air. Setelah 15 menit, tambahkan 2 cm lengkuas yang sudah digeprek, 2 batang serai yang sudah digeprek, 2 lembar daun salam, 2 lembar daun jeruk purut. Masukkan bumbu halus yang sudah ditumis. Diamkan 15 menit di atas api kecil. Tambahkan rajangan daun bawang dan seledri. Angkat.

Rebus taoge, kol yang sudah diiris-iris. Tiriskan. Potong-potong tomat.

Ambil ayam yang sudah matang, goreng dalam minyak panas yang banyak. Pakai api besar, bagian luar langsung garing, tapi bagian dalam daging ayam masih empuk.

Tata ayam goreng, irisan kol dan tomat, taoge di piring. Siram dengan kuah soto. Tambahkan perasan air jeruk nipis dan taburan bawang goreng. Bisa dinikmati dengan sambal dan kerupuk atau emping.

Crush 4 pieces of garlic, 4 pieces of shallot, 1 centimeter of peeled fresh ginger, 2 centimeters of peeled fresh turmeric, 1 tea spoon coriander seeds, 2 pieces of candlenut. Afterwards, sauté those spices a moment until the aroma comes out.

Cut chicken in portions, put into a pot with 2 cups of water. Bring to boil. After about 15 minutes, add 2 centimeters of crushed galangal, 2 pieces of lemon grass, 2 pieces of bay leaves, 2 pieces of kaffir lime leaves. Add the crushed-sautéd spices. Wait about 15 more minutes with low heat. Add chopped celery and chopped spring onion then take the pot out of the stove.

Stew a moment mung bean sprouts and slices ofcabbage. Strain. Cut tomato.

Take the chicken from the pot. Fry in plenty of oil with medium-high heat, so that the outer part of it could be crisp easily but the inner part is still tender.

Put the fried chicken, cabbage, tomato, mung bean sprouts in a plate. Pour the liquids from the pot. Add a few drops of lime juice and sprinkle of fried shallot. Can be served with sambal and krupuk or emping if you like.
