Ayam Bacem

Aku dan suamiku kangen ayam goreng Pak Kromo, jadi hari ini aku masak ayam goreng bacem. Sebelumnya, aku nggak pernah terpikir untuk masak baceman. Alasannya karena aku nggak begitu suka makan tahu atau tempe bacem. Tapi, kupikir-pikir, ayam goreng bacem, boleh lah.

Masukkan setengah ekor ayam yang sudah dibersihkan dan dipotong-potong ke dalam panci. Tuangkan air dari 1 butir kelapa. Tambahkan 2 sendok makan gula merah yang sudah diiris-iris, 3 sendok makan kecap manis, sedikit garam dan merica, 1 sendok teh asam, 2 lembar daun salam, 2 cm lengkuas geprek, 2 siung bawang putih geprek, 2 siung bawang merah geprek, 2 sendok teh ketumbar, 2 biji kemiri geprek. Masak hingga airnya hampir habis. Angkat.

Goreng ayam sebentar saja, sekitar 1-2 menit dalam minyak yang banyak. Karena manis, jadi ayam cepat gosong.

Sajikan bersama sambal bawang, potongan ketimun dan kol.

Me and my beloved hubby, we wanted to eat sweet spiced chicken today. It’s “ayam bacem”, in bahasa Indonesia, sort of typical food from Central Java region.

Put a half chicken that has been cut in portion into a pot. Pour 2 glasses of coconut water. Add 2 table spoons of palm sugar, 3 table spoons of sweet soy sauce, a pinch of salt and ground white pepper, 1 tea spoon of tamarind, 2 pieces of bay leaves, 2 centimeter of crushed galangal, 2 pieces of crushed garlic, 2 pieces of chopped shallot, 2 tea spoons of coriander, and 2 pieces of crushed candlenut. Cook until the liquid is dried out. Take out the pot from the stove.

Fry the spiced chicken for 1-2 minutes in plenty of oil. Because it’s sweet, so the chicken burnt easily.

Serve with sambal bawang, slices of cucumber and cabbage.

      Of course, it would be great to add my blog to Petitchef.com.

      I’m concerning about ingredients substitutes, actually. So we’re Indonesian could make French cuisine, for example, easily with the ingredients found around us. And vice versa. I think that would be fun.
